With more than 15 years of experience behind the bar, Fabien Maillard has shared his passion for cocktails throughout Quebec and Canada. A master mixologist, he takes clients on a voyage of the senses thanks to his truly divine mixtures.

Fabien's reputation has been established on several continents. He has qualified for numerous international flair and mixology competitions and is the founding owner of Mixoart and the Lab, comptoir à cocktails. A lover of both history and travel, Fabien earned a degree in culinary arts and hotel management. He began his bartending career in Paris and then developed his experience and knowledge while travelling through the Caribbean, Japan and other exotic destinations.

  • Signature cocktail : El Commandante;  (Lab Vanilla Bitters, caramelised pineapple syrup, Chambéry Dolin red vermouth and Plantation Trinidad Multi Millésimes rum.)

Gabrielle is passionate about travel, discovery and everything related to flavour. After having completed her culinary training at Montreal's ITHQ, Gabrielle discovered the intriguing world of cocktails while working at the prestigious Eau-de-vie bar in Sydney, Australia. She is now the founder and owner of ProxiBar, and is also the director and co-owner of the Lab, comptoir à cocktails.

Founder of Tablée Cocktails and a delicious line of signature Lab syrups, her incredible talent is reflected in her vast array of successes and achievements. Naturally gifted in the art of mixing flavours, Gabrielle adores sharing her passion and enthusiasm with every person she meets.

  • Favourite alcohol : Scotch, with a weakness for those hailing from the Highland regions

  • Signature cocktail : The Ying-Yang (Greygoose Pear, Armagnac, Absinthe and elderflower syrup)
  • Best life experience to date : When I had the honour of participating as the Canadian representative in the International Grey Goose Pour Masters cocktail competition. It's an experience that every bartender deserves to enjoy!
